Vegetable donuts with soymilk
Serving 6 people 15mn preparation – cooking time : 5mn
  • 15 to 20cl of plain soymilk
  • 150gr of soya flour
  • 100gr of wheat flour
  • ½ bunch of cress or any other salad
  • 1 eggplant
  • 1 nice potato
  • 2 onions
  • Olive oil for frying
  • 1 teaspoon of cumin powder
  • 1 teaspoon of paprika
  • 1 pinch of cayenne pepper
  • Salt
  1. Heat the oil at 180 degrees. Mix in a bowl flours, cumin powder, paprika, salt and sprinkle with the cayenne pepper. Add the soymilk to get a paste fluid enough but not too much.
  2. Clean, dry the salad  and mince roughly. Peal off the eggplant and the potato, cut the eggplant in pieces and the potato in cubes. Chop the onions and dry them into a cloth to extract the excess of water.
  3. Add this preparation to the paste, shape some donuts in the palm of your hand and fry them for 3 to 5mn.
