Tomatoes with tofu and basil

  • 125gr of plain tofu
  • 8 tomatoes
  • 1 clove of garlic
  • 1 small onion
  • 1 bunch of basil
  • few blades of chives
  • 1 little bunch of parsley
  • 1 big spoon of olive oil
  • 1 big spoon of balsamic vinegar (or soysauce)
  • Lemon juice
  • Salt, pepper
  1. Clean the tomatoes, dry them and cut in cubes. Cut the tofu in cubes of 1 cm. Clean the basil, chives (minced ), parsley and chop them up. Peal off and crush the clove of garlic. Peal off and chop finely the onion.
  2. Arrange the tomatoes in a salad bowl and sprinkle with the tofu on top. Add the onion, basil, chives, parsley and garlic.
  3. Prepare a French dressing with the oil ,vinegar or soysauce, lemon, salt and pepper. Pour the dressing on the tomatoes, mix well and serve. (taste better when chilled)
