Pumpkin soup with soymilk
Serving 4 people 10mn. preparation
  • 1 l liter of plain soymilk
  • 500 g of pumpkin
  • 1 big spoon of oat flakes
  • 1 big spoon of minced parsley
  • Salt, pepper
  1. Clean, remove the seeds of the pumpkin and cut it in big cubes. Cook it ½ an hour  a l’etouffe in a stewing pot, cover it with a lid and add some water from time to time if needed. Blend the preparation in a food mixer and poor it back into the stewing pot. Add the soymilk and the oat flakes. Salt,  pepper
  2.  Let it simmer for about 25mn stirring from time to time. You can add some little extra soymilk 5mn before the end of the cooking to obtain a smoother and creamy soup. Blend it one more time in the food mixer before serving, sprinkle with the minced parsley
