Cream of tomatoes
Serving 4 to 6 people 15mn preparation- cool it down : 10mn
  • 25cl of plain soymilk
  • 1 big tin of peeled tomatoes
  • 1 cucumber
  • 1 onion
  • 1 hard boiled egg
  • 1 green capsicum
  • 2 cloves of garlic
  • 3 big spoons of olive oil
  • 1big spoon of vinegar
  • 50cl of water or  vegetable stock
  • 1 small bunch of chopped parsley
  • salt, pepper
  1. Put in a mixer tomatoes, ¾ of the cucumber (pealed off), onion pealed and roughly chopped, the hard boiled egg, ¾ of the capsicum, garlic pealed, oil, vinegar, salt and pepper. Blend well till you get a smooth and fluid preparation.
  2. Pour into a salad bowl, dilute with the water or vegetable stock, add the soymilk and keep in fridge at least 1 hour. Serve with the rest of the cucumber and capsicum minced and sprinkle with the parsley.
